Zucchini Nut Bread

ingredients

  • 2 cups sugar
  • 2 cups shredded zucchini unpealed
  • 2 cups flour
  • 1 tbsp cinnamon
  • 1/4 tsp baking powder
  • 2 tbsp lemon rind
  • 1 cup oil
  • 1 cup chopped nuts
  • 1 1/2 tsp soda
  • 1 tsp salt
  • 1 tbsp vanilla
  • 3 eggs

instructions

  1. mix eggs, oil, vanilla and zucchini together
  2. mix dry ingredients together
  3. mix dry and wet together slowly
  4. grease pan or use muffin cups
  5. for muffins bake at 400 for 15-18 minutes
  6. for loaf bake at 350 for 45-50 minutes
