Zucchini Nut Bread

ingredients
- 2 cups sugar
- 2 cups shredded zucchini unpealed
- 2 cups flour
- 1 tbsp cinnamon
- 1/4 tsp baking powder
- 2 tbsp lemon rind
- 1 cup oil
- 1 cup chopped nuts
- 1 1/2 tsp soda
- 1 tsp salt
- 1 tbsp vanilla
- 3 eggs
instructions
- mix eggs, oil, vanilla and zucchini together
- mix dry ingredients together
- mix dry and wet together slowly
- grease pan or use muffin cups
- for muffins bake at 400 for 15-18 minutes
- for loaf bake at 350 for 45-50 minutes
