Zucchini Brownies

ingredients

  • 1 1/2 cup sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup chopped pecans
  • 1/2 cup oil
  • 1 tsp salt
  • 2 cups zucchini, shredded
  • 1/2 cup baking cocoa
  • 1 tsp baking soda

instructions

  1. Mix sugar, oil and vanilla; set aside
  2. In a separate bowl, whisk together flour, cocoa, baking soda and salt
  3. Blend in sugar mixture, zucchini and nuts
  4. Pour into a lightly oiled 13 x 9 baking pan and bake at 350 degrees for 25 to 30 minutes
  5. Cut into squares!!
