Pasta Sauce

ingredients
- 1 cup red wine
- 1/2 bunch fresh basil
- 4 tomatoes
- 1 eggplant
- 1 red bell pepper
- 8 garlic cloves
- 10 portabella mushrooms
instructions
- heat pan with a little oil
- peel eggplant
- dice the tomatoes, bell pepper, eggplant and mushrooms into cubes
- bring tomatoes and bell peppers to a low simmer
- add red wine
- simmer for about 20 minutes
- add eggplant and simmer another 30 minutes
- add mushrooms and continue simmering until it gets thick
- mince basil and add at during the last couple of minutes of simmering
don't forget to stir occasionally while simmering
