Green Salsa

ingredients

  • 3 limes
  • 1 onion
  • 4 serrano peppers
  • 4 carrots
  • 1/4 cup diced green onion
  • 3 cloves garlic
  • 5 jalapeño peppers
  • 2 habanero peppers
  • 1 tsp cumin powder
  • 12 tomatillos
  • 1/4 cup diced cilantro

instructions

  1. boil carrots until they're a little soft
  2. slice tomatillos in half
  3. grill (or smoke or roast) tomatillos, garlic and peppers
  4. remove skins and chop peppers
  5. chop carrots, cilantro, garlic and onions
  6. run tomatillos and peppers through a food processor
  7. add carrots, cilantro, cumin, garlic and onions to the tomatillo/pepper mixture
  8. mix in lime juice
