Yes, Peter I did make bread out of those bad bananas!

ingredients

  • 1/8 tsp salt
  • 1 cup pecans chopped (optional)
  • 1 1/2 cups all-purpose flour
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 egg, beaten
  • 4 ripe bananas, smashed

instructions

  1. No need for a mixer for this recipe.
  2. Preheat the oven to 350 degrees.
  3. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
  4. Mix in the sugar, egg, and vanilla
  5. Sprinkle the baking soda and salt over the mixture and mix in.
  6. Add the flour last, mix
  7. Add pecans
  8. Pour mixture into a buttered 4x8 inch loaf pan
  9. Bake for 1 hour
  10. Cool on a rack
  11. Remove from pan and slice to serve
